CULINARY ARTS: Chef Wayne Elias, meanwhile, is whipping up a feast
for attendees at Elton John's AIDS Foundation Gala. "The first
courses will consist of a light buffalo marinara salad with poached
vine-ripened tomatoes and frisee topped with a black Italian vinaigrette,"
he lets us know. "One of the entrees will feature a mouth-watering
grilled filet mignon with red wine and bearnaise sauce accompanied
by potato cakes and braised carrots. And for those seafood lovers,
we will have a Maine lobster with caramelized shallots, sour cream,
goat cheese and caviar quesadillas garnished with lemon sauce and
fresh dill - hungry yet?" Yes! And then, there are desserts
"too numerous to name, but I'm sure the mini macadamia heart
cookies dipped in Belgian dark chocolate will be a favorite,"
