Chef Wayne Elias Has L.A. Eating Out of His Hands

It’s almost certain that everyone who is anyone in Tinseltown has tasted the culinary prowess of chef Wayne Elias. One of the most prolific figures in the high-profile, high-end Los Angeles food industry, Elias and business partner Chris Diamond co-own the popular Mark’s Restaurant in West Hollywood, manage the NBC Studios Commissary and supply concessions for the John Anson Ford Theatre.

On the side, Elias runs a highly successful private catering business, Crumble Catering. Balancing these seemingly full-time responsibilities, while personally preparing menus and dishes for such glitzy affairs as the Charlie & The Chocolate Factory premiere and Elton John’s Oscar party, begs an answer to the question, “How does he get it all done?”

While jokingly admitting, “That’s a damn good question,” Elias says he manages to juggle everything free of stress. The secret? “It’s all about organization,” he says.

“If you’re on top of it enough,” he adds, “you can pull off as many tasks as possible without any of it falling apart.”
